Ingredients:
Banana 1
Granulated Sugar 80g
Butter 100g
Egg 1
Cake Flour 190g
Chopped Nuts
Instructions:
1/In a mixing bowl, cream the room temperature butter and granulated sugar until smooth. Add the egg and continue beating until well combined.
2/Sift in the cake flour and fold until just combined. Add the banana chunks and beat until smooth. Mix in the chopped nuts. Transfer the batter into a piping bag and set aside.
3/Place the mold on a baking tray and spray with non-stick oil. Pipe the batter into the mold, filling it to about 80% full. Sprinkle with chopped nuts.
4/Lightly tap the baking tray to remove any air bubbles.
5/Preheat the oven to 170°C (340°F). Bake for 50-60 minutes, or until the surface is golden brown and a toothpick inserted into the cake comes out clean.
6/After baking, sprinkle the cake with powdered sugar.
Tips:
1/Do not overmix the batter, as overmixing can develop gluten and result in a dense cake.
2/To check if the cake is done, insert a toothpick into the center of the cake. If it comes out clean, the cake is done. Alternatively, gently press the center of the cake; if it springs back, the cake is ready.
