Scallion Pancake Recipe
Makes 4 cakes
Ingredients:
2 cups Maida/all-purpose flour, plus extra for dusting
1 cup Boiling water
¼ cup Sesame oil
2 cups Scallions/spring onions, finely sliced
Salt to taste
Dipping sauce
2 tbsp Soy sauce
2 tbsp Vinegar
1 tbsp Scallion/spring onion greens, finely sliced
½ tsp Ginger, freshly grated
2 tsp Sugar
½ tsp Red chilli flakes
Method:
Dough Preparation:
Take a mixing bowl, add flour and boiling water. Mix with ladle. Do not use hands as the dough will be hot.
Cover with a wrap and keep aside for an hour.
Dipping sauce:
Add all the “Dipping sauce” ingredients to a bowl and mix well.
Pancakes:
Take the dough, remove the cover, knead dough few times to make into a smooth ball.
If dough is sticky, grease hands with oil and knead.
Cut dough into 4 equal portions. Take a portion, dust in flour and roll into a thin sheet.
Apply sesame oil, sprinkle some salt. And add spring onions.
Roll the dough into round shape.
Dust in flour and roll again into round pan cake.
Heat pan, add sesame oil. Place the pancake and roast for 3-4 mins on each side or until the pancake turns golden brown in color. Flip sides in between.
Squeeze pancake to fluff up layers and slice the pancake.
Serve hot with dipping sauce.
